I do not claim I invented this recipe, as this sound trended over a year and a half ago. But, when I tell you it is the most life changing high-protein, nutrient-dense breakfast idea... literally spectacular give me 'em every morning. Not going to lie, I have been making these sweet eggs/sweet potato pancakes every morning for the past two weeks.
Huh... "Sweet Eggs"?
Okay. I know sweet eggs do not sound pleasing or appetizing... but, this concoction is EVERYWHERE in the baking world.
Thanks to ChatGPT, here is a list of desserts that are basically just eggs and sugar:
Crème caramel / flan
Baked custard
Crème brûlée
Meringue
Pavlova
Zabaglione (Italian egg custard)
Oeufs à la neige / Floating island
Sweet omelet (omelette soufflée sucrée)

Now that I have convinced you all that this combination isn't delusional, allow me to introduce my holy grail breakfast dish IN ADDITION to my sardines.
Ingredients
The "sweet eggs" recipe — or, more eloquently put, "sweet potato pancakes" — only calls for three ingredients plus two spices, which do not count.
Maybe a cup of mushed cooked japanese sweet potato
3 Eggs
1/4 cup Oats
Add some nutmeg & cinnamon, and you are GOLDEN.
How to Make
1. Bake a few Japanese Sweet Potatoes in Oven @400°F for 60 Mins
2. Mush in a bowl until you get a mashed potato situation
3. Transfer the excess mashed potatoes into a Tupperware for use throughout the week
4. Mix 3 eggs into about a cup of mashed sweet potato to form a batter
5. Toss in 1/4 cup of oats in the batter
5. Add some Cinnamon & Nutmeg
6. Pour batter onto pan with E.V.O.O/Avocado Oil/ Butter and cook both sides ~ 3 mins
7. ENJOY!

Typically, I eat these "sweet eggs" with a scoop of cottage cheese and after 1 serving of sardines, so I total nearly 58g of protein every morning
58g Protein Breakfast = 20g from Sweet Eggs + 18g from Cottage Cheese + 20g from Sardines
The world is your oyster too! You can add berries, seeds, banana, or nut butters to add more fiber into the dish. Get creative!
