By Ashton Arjomand:

Do you know the TikTok sound: "Spectacular... give me 14 of 'em right now"

If you do not, watch here: https://www.tiktok.com/t/ZTMf8MnxC/

I do not claim I invented this recipe, as this sound trended over a year and a half ago. But, when I tell you it is the most life changing high-protein, nutrient-dense breakfast idea... literally spectacular give me 'em every morning. Not going to lie, I have been making these sweet eggs/sweet potato pancakes every morning for the past two weeks.

  1. Huh... "Sweet Eggs"?

Okay. I know sweet eggs do not sound pleasing or appetizing... but, this concoction is EVERYWHERE in the baking world.

Thanks to ChatGPT, here is a list of desserts that are basically just eggs and sugar:

  • Crème caramel / flan

  • Baked custard

  • Crème brûlée

  • Meringue

  • Pavlova

  • Zabaglione (Italian egg custard)

  • Oeufs à la neige / Floating island

  • Sweet omelet (omelette soufflée sucrée)

  • Egg pudding

  • Japanese tamago yaki (sweet rolled egg)

  • Sponge cake / génoise

  • Angel food cake

  • Chiffon cake

  • Swiss roll base (eggs + sugar + little flour)

  • Lemon curd (eggs + sugar + lemon juice)

Now that I have convinced you all that this combination isn't delusional, allow me to introduce my holy grail breakfast dish IN ADDITION to my sardines.

  1. Ingredients

The "sweet eggs" recipe — or, more eloquently put, "sweet potato pancakes" — only calls for three ingredients plus two spices, which do not count.

  • Maybe a cup of mushed cooked japanese sweet potato

  • 3 Eggs

  • 1/4 cup Oats

Add some nutmeg & cinnamon, and you are GOLDEN.

  1. How to Make

1. Bake a few Japanese Sweet Potatoes in Oven @400°F for 60 Mins

2. Mush in a bowl until you get a mashed potato situation

3. Transfer the excess mashed potatoes into a Tupperware for use throughout the week

4. Mix 3 eggs into about a cup of mashed sweet potato to form a batter

5. Toss in 1/4 cup of oats in the batter

5. Add some Cinnamon & Nutmeg

6. Pour batter onto pan with E.V.O.O/Avocado Oil/ Butter and cook both sides ~ 3 mins

7. ENJOY!

  1. Why

  • High in protein: 3 eggs (≈20 g of protein) provide complete amino acids for muscle repair and satiety.

  • Slow-digesting carbs: Japanese sweet potato and oats offer steady energy and natural sweetness with a low glycemic index.

  • Moderate healthy fats: Egg yolks supply omega-3s, choline, and fat-soluble vitamins (A, D, E, K).

  • Fiber & micronutrients: The combo of oats and sweet potato adds gut-friendly fiber, vitamin A, potassium, magnesium, and antioxidants.

  • Balanced macros: Naturally combines protein, complex carbs, fiber, and healthy fats for sustained fullness and stable blood sugar.

  • Whole-food simplicity: No refined flour, sugar, or processed ingredients — gluten-free, nutrient-dense, and satisfying.

According to ChatGPT, this is the nutritional breakdown for this particular serving size which is FANTASTIC to start you day

Approximate Nutrition Total for 1 Serving

  • Calories: ~ 340–360 kcal

  • Protein: ~ 20–22 g

  • Carbohydrates: ~ 40–45 g

  • Fat: ~ 11–13 g

  • Fiber: ~ 6–7 g

Typically, I eat these "sweet eggs" with a scoop of cottage cheese and after 1 serving of sardines, so I total nearly 58g of protein every morning

58g Protein Breakfast = 20g from Sweet Eggs + 18g from Cottage Cheese + 20g from Sardines

The world is your oyster too! You can add berries, seeds, banana, or nut butters to add more fiber into the dish. Get creative!

I lay my argument down, so it is up to you to try this out. I KNOW YOU WILL NOT REGRET IT – GIVE IT A TRY!
